Ideally, I'd like to go somewhere with Hubs (and maybe the kids, either way), exploring somewhere I've never been before that's off the beaten path. I hate tourist traps. I want to experience the local culture, cuisine, and customs. Love that.

I did. I was in catering at place on Longboat Key, Florida, called The Colony, back when I was doing my internship at Mote Marine Laboratory. Its clientele was often the hoity-toity rich and famous. That was a blast. The Colony is no longer in existence, sadly.

I'd want to go to TriBeCa and Chelsea and see places I've never been. I grew up going into Manhattan frequently, and the Bronx and Staten Island on occasion (my parents are both from NYC), but never really got to those areas.
